Fileter \/ d\u00e9couper le poisson comme indiqu\u00e9 <\/span><a href=\"https:\/\/www.instagram.com\/p\/DFDVtJFIsAK\/\"><span style=\"font-weight: 400;\">dans cette bobine<\/span><\/a><span style=\"font-weight: 400;\"> et d\u00e9coupez la t\u00eate et les os. Conservez la poitrine et les parures de filet pour les sushis ou les sashimis.<\/span><\/li>\n<li><span style=\"font-weight: 400;\"> R\u00f4ti du dimanche : faites dorer la selle \u00e0 feu moyen-vif pendant environ 3 minutes de chaque c\u00f4t\u00e9. Versez la graisse fondue et mettez le poisson au four \u00e0 100\u00b0C pendant environ 30-35 minutes, ou jusqu'\u00e0 ce que la temp\u00e9rature \u00e0 c\u0153ur atteigne 45\u00b0C. Sortez le poisson du four et laissez-le reposer pendant 8 \u00e0 10 minutes.<\/span><\/li>\n<li><span style=\"font-weight: 400;\"> Jus de poisson : faire r\u00f4tir les ar\u00eates dans une po\u00eale jusqu'\u00e0 ce qu'elles soient bien color\u00e9es. \u00c9liminer la graisse et remettre dans la po\u00eale avec les \u00e9chalotes et l'ail. Faire revenir doucement, d\u00e9glacer avec le vin et le vinaigre et r\u00e9duire jusqu'\u00e0 obtenir un gla\u00e7age. Ajouter la sauce soja, le fumet de poisson et le thym et laisser mijoter doucement pendant 20 \u00e0 30 minutes. Passer au tamis fin et r\u00e9duire doucement jusqu'\u00e0 obtention de la consistance souhait\u00e9e.\u00a0<\/span><\/li>\n<li><span style=\"font-weight: 400;\"> L\u00e9gumes glac\u00e9s : blanchissez et r\u00e9servez vos l\u00e9gumes de saison pr\u00e9f\u00e9r\u00e9s. Pendant que le r\u00f4ti repose, ajoutez-les dans une casserole avec un peu d'eau ou de bouillon et un peu de beurre. R\u00e9duire jusqu'\u00e0 ce que les l\u00e9gumes soient glac\u00e9s, servir avec le poisson r\u00f4ti et le jus de cuisson.
