Bewaar de restjes van de buik en filets voor sushi of sashimi.<\/span><\/li>\n<li><span style=\"font-weight: 400;\"> Sunday roast: bak het zadel op middelhoog vuur ongeveer 3 minuten aan elke kant. Giet het gesmolten vet weg en zet de vis ongeveer 30-35 minuten in de oven op 100C, of tot de kerntemperatuur 45\u00b0C is. Haal de vis uit de oven en laat 8-10 minuten rusten.<\/span><\/li>\n<li><span style=\"font-weight: 400;\"> Visjus: braad de graten in een pan tot ze mooi gekleurd zijn. Zeef het vet af en doe terug in de pan met de sjalotten en knoflook. Bak zachtjes aan, blus af met de wijn en azijn en laat inkoken tot een glazuur. Voeg de sojasaus, visbouillon en tijm toe en laat ongeveer 20-30 minuten zachtjes sudderen. Passeer door een fijne zeef en laat zachtjes inkoken tot de gewenste consistentie is bereikt.\u00a0<\/span><\/li>\n<li><span style=\"font-weight: 400;\"> Geglaceerde groenten: blancheer je favoriete seizoensgroenten en reserveer ze. Terwijl het gebraad rust, voeg je deze toe aan een pan met een beetje water of bouillon en wat boter. Laat inkoken tot het glazig is en serveer met de geroosterde vis en jus.
