BBQ Yellowtail with lemon and spices

“How delicious is this? The tastiest fish in the Netherlands with a light smoky flavor from the BBQ? I can tell you, it’s the best thing in this world! Although I enjoy culinary dishes, I think they are great, but every now and then a delicious Burgundian dish is also a favorite. It’s actually quite easy and I’ll show you how!”

Ingredients
For the Yellowtail
- 1 whole Yellowtail, gutted
- 2 lemons
- 1 bunch of parsley
- 2 sprigs of thyme
- Sea salt
- Pepper
Preparation:
Light the BBQ with charcoal and possibly some smoke chips for even more flavor.
Bring it to 200°C.
Wash 1 lemon and cut it into thin slices. Put salt and pepper in the Yellowtail’s abdominal cavity.
Add the lemon slices, 6 sprigs of parsley and 2 sprigs of thyme.
Keep some parsley on hand and chop it coarsely for finishing.
Place the Yellowtail in a fish clamp.
Cook the fish alternately on the BBQ for about 15-20 minutes.
Remove the fish from the clamp and sprinkle with coarse sea salt, freshly chopped parsley and the zest of a lemon.
Delicious Burgundian whole in a bowl or on a board in the middle of the table and enjoy!
